Jewish Chicken Soup - This is the Real Thing

Here is my mother’s recipe for chicken soup. Known as Jewish penicillin. It looks complicated at first glance, but it’s really very easy to make.
Chicken Soup
***(Make the soup the day before so that the fat will harden, come to the top of the bowl, and you can discard it.)***

Ingredients:
If possible, buy a pullet (chicken less than a year old) from the butcher — (cut into 1/8’s and ask for extra gurgles and gizzards, if butcher has them).
(You can use a package of Empire’s Cut-Up Chicken Parts — the pullet is better, but the Empire cup-up parts is okay to use as a substitute).

Make an Herb Bundle — wrapped and tied in cheesecloth:
*parsley (Italian parsley with the root, if available; cut off the root and scrape it clean. Add it to the soup). [It's okay if you can't get the parsley root.] [If Italian parsley is not available, then the regular curly parsley is okay].
*dill
*celery (one rib, cut into workable pieces — two or three pieces, depending on the size of the rib)
*celery leaves
*one bay leaf (dried)
[The bundles of parsley and dill are usually so large that I use only half a bundle of each. I freeze the other half for the next time I want to make chicken soup].

carrots — [I use 2 carrots, cut into three or four pieces each.]
onions (whole) [we use 2 onions because we like to eat an onion in the soup; otherwise, one onion is probably enough.]
6 glasses water
salt

Directions:
Bring chicken and water to a boil. Take off the dark foam that forms when the water boils. When the foam stops forming, add the carrots, onions, and herb bundle. Cover and boil for one and a half hours.

When cool, using a fork, press the liquid from the herb bundle and add to the soup. Discard the herb bundle. Separate the chicken, carrots, and onion from the soup and refrigerate. Pour the soup into a large bowl and refrigerate overnight so that the fat will harden.

The next day: Remove the fat that has formed on the top of the soup. Extra soup can be frozen, if desired.

The Gourmet SEO: Chocolate Chip Cookie Cake

An SEO Consultant needs to eat properly. So, once in awhile I publish a recipe. This time it’s on dessert. Believe it or not, this recipe is healthy. It’s because of the whole wheat that provides Fiber & protein.

Every couple of weeks my wife make this amazing chocolate chip cookie cake. It tastes like soft chocolate chip cookies right out of the oven. I can’t rave about this enough. Suffice it to say, if you like chocolate chip cookies, then you’re gonna flip over this recipe.

The photo is a picture of the last slice left. We bascially devour this thing over the weekend. Children, neighbors, and anyone else that catches sight of it, usually want a slice. The real secret is in the amount of chocolate chips used. Use alot. It makes a difference.

1 cup canola or safflower oil
1 cup sugar
.5 cup brown sugar packed firmly
2 eggs
2 and 1/3 cup of whole wheat flour
1 cup oatmeal
1 tsp salt
1 tsp baking soda
2 tsp of vanilla extract
2 cups chocolate chips (semi-sweet)

Preheat oven to 350 degrees.
Blend together oil, sugars, eggs, and vanilla until creamy.
Combine flour oatmeal, salt, baking soda, and add to creamed mixture.
Stir in chocolate chips .
Pour into a 9 inch round cake pan.

Bake until desired doneness. Bake from 15 to 20 minutes . Use a toothpick to test.

Spicy Chili Recipe for Hungry SEO’s

Once in awhile, I like to write a post that is unrelated to an SEO Consultant. You guessed it. It’s time once again for the Gourmet SEO (that’s me) to whip up another mouth-watering post. Side note: I think I’m gonna get a barbecue apron that says, “Gourmet SEO”.

This past weekend, I was invited to a friends house for a barbecue. And, one of the many things he served was a Spicy Chili. It was perfect! Just the right amount of zing to leave a burning, flavorful taste in your mouth. My forehead broke out beading sweat after eating a half bowl of this stuff. My nose became a little runny. The cold Corona beer he served tasted so good with this. Also, I was especially ravenous after a good workout pumping some iron, so I felt like I could eat bowlfuls …but I didn’t.

This recipe is NOT in any book. My friend created it himself. It’s not like he is a chef. He is a NJ Real Estate Appraiser. So with his permission, below is his recipe.

Spicy Chili Recipe:
2 lbs ground beef (not lean).
2 six oz cans tomato paste.
4 medium onions - chopped.
2 green peppers - chopped.
8 cloves garlic - chopped.
2 Tbsp chili powder.
1 Tbsp cumin.
1 Tbsp. oregeno.
1/2 Tbsp basil.
1 can diced tomatoes.
1 can black beans.
1 can real kidney beans.
Salt - to taste.
2 Jalapeno Peppers.
1 can hot pepper mix (10 oz).

Instructions:
Saute Onions & Garlic in Olive Oil.
Brown meat in Olive Oil.
Add everything to pot & simmer for 2-3 hours.

Dairy Kugel recipe for Hungry SEO’s

When made correctly, this is better than NY Cheesecake. No joke.

I know this isn’t a post related to SEO. Unless you can make the argument that it’ll provide you the energy to keep optimizing websites. The reason I posted the Gourmet Meatloaf recipe, and now this Dairy Kugel recipe, is because I lost the paper copy once, and thought by posting the recipe, I’d always know where to find it. As a side benefit, all my readers can enjoy it. Additionally, I have to keep my promise to Lisa. And once in awhile, it’s nice to post something unrelated to SEO. Okay, now that I’ve rationalized this post, here’s the recipe…

DAIRY KUGEL RECIPE (Ma-Ma Dorothy’s Recipe):
(This is an awesome recipe, but very high in fat)

1 lb. medium noodles, cooked and drained
1 pt. milk
1-1/2 lb. pot cheese (or dry flake cottage cheese)
1 c. sugar
½ lb. cream cheese
6 eggs
1/8 c. sugar and cinnamon
1/4 lb. butter
1 pt. sour cream

Cook and drain noodles. Cut butter into small pieces and add to warm noodles. Set aside. Using electric mixer, mix pot cheese and cream cheese together, mashing with a fork first. Then add sour cream. Mix until very smooth. Fill empty sour cream container with milk and add to mixture. Season with salt and pepper. Then add 1 c. sugar, mixing well with electric mixer. Add 6 eggs, one at a time. Continue mixing. Pour mixture over noodles and mix well. Grease a large, deep 13 x 9″ pan with oil. Pour noodle mixture into pan. Sprinkle top with sugar-cinnamon mixture. Bake at 350 degrees for 1 hour. Cool. Refrigerate and slice when cold.

* Note: This makes a very large kugel and may be too much for a regular 13 x 9″ baking pan. It may be desirable to cut the recipe in half.

FAT-FREE VERSION OF ABOVE RECIPE
(Not quite as good, but healthier)

12 oz. pkg. of yolk-free medium-width noodles
2 tsp. vanilla
12 oz. whipped (or regular) fat-free cottage cheese
1 ½ cups sugar
8 oz. fat-free sour cream
6 egg whites
4 oz. fat-free cream cheese
sugar & cinnamon mixture
1 envelope powdered skim milk

Cook and drain noodles. Set aside. With a fork, mix cottage cheese and cream cheese. Add sour cream and mix until very smooth. Stir in powdered milk. Add vanilla. Mix. Add sugar and mix well. Add egg whites one at a time. Mix until very smooth and well combined. (All mixing can be done with a fork). Pour mixture over noodles and mix well. Oil a 13 x 9″ baking pan. Pour in noodle mixture. Sprinkle top with sugar and cinnamon mixture. Bake at 350 degrees for about 1 hour and 25 minutes. Cool. Refrigerate and slice when cold.

Sweet Parve Kugel
I used to have the recipe for a sweet kugel that was just noodles, golden raisins, cinnamon, and sugar. I have no idea where the recipe is now. But, just use the same amount of noodles, and add a healthy amount of the other ingredients. Bake as above recipes.

Variations can include apples and cinnamon.

Gourmet Meatloaf for Hungry SEO’s

The post is slightly off-topic, but well worth it.

This is a recipe that I found from a cookbook I discovered in my grandparent’s basement many years ago. I don’t have the cookbook anymore, nor do I know the name of the cookbook. But, this thing was wriiten in the 1950’s, and was during a time period when people ate a lot of ground beef.

I tried it. And, let me tell you something…this ain’t no ordinary meatloaf. Ketchup would ruin this tasty dish. This is Gourmet Meatloaf. No joke. It’s official name was “Delicious Meat Loaf”.

Here’s the recipe:

1.5 lbs Hamburger meat
2 eggs lightly beaten
1 envelope Onion Soup mix
3 cups of flavored bread crumbs (I use Jason’s Bread Crumbs )
1 cup water
1/4 teaspoon pepper
1/3 cup melted margerine
2 tablespoons chopped parsley

Mix all ingredients and place in a 2 Quart casserole pan. Bake at 350 degrees for 1 hour.
Yield: 4-5 servings
