Dairy Kugel recipe for Hungry SEO’s

When made correctly, this is better than NY Cheesecake. No joke.

I know this isn’t a post related to SEO. Unless you can make the argument that it’ll provide you the energy to keep optimizing websites. The reason I posted the Gourmet Meatloaf recipe, and now this Dairy Kugel recipe, is because I lost the paper copy once, and thought by posting the recipe, I’d always know where to find it. As a side benefit, all my readers can enjoy it. Additionally, I have to keep my promise to Lisa. And once in awhile, it’s nice to post something unrelated to SEO. Okay, now that I’ve rationalized this post, here’s the recipe…

DAIRY KUGEL RECIPE (Ma-Ma Dorothy’s Recipe):
(This is an awesome recipe, but very high in fat)

1 lb. medium noodles, cooked and drained
1 pt. milk
1-1/2 lb. pot cheese (or dry flake cottage cheese)
1 c. sugar
½ lb. cream cheese
6 eggs
1/8 c. sugar and cinnamon
1/4 lb. butter
1 pt. sour cream

Cook and drain noodles. Cut butter into small pieces and add to warm noodles. Set aside. Using electric mixer, mix pot cheese and cream cheese together, mashing with a fork first. Then add sour cream. Mix until very smooth. Fill empty sour cream container with milk and add to mixture. Season with salt and pepper. Then add 1 c. sugar, mixing well with electric mixer. Add 6 eggs, one at a time. Continue mixing. Pour mixture over noodles and mix well. Grease a large, deep 13 x 9″ pan with oil. Pour noodle mixture into pan. Sprinkle top with sugar-cinnamon mixture. Bake at 350 degrees for 1 hour. Cool. Refrigerate and slice when cold.

* Note: This makes a very large kugel and may be too much for a regular 13 x 9″ baking pan. It may be desirable to cut the recipe in half.

FAT-FREE VERSION OF ABOVE RECIPE
(Not quite as good, but healthier)

12 oz. pkg. of yolk-free medium-width noodles
2 tsp. vanilla
12 oz. whipped (or regular) fat-free cottage cheese
1 ½ cups sugar
8 oz. fat-free sour cream
6 egg whites
4 oz. fat-free cream cheese
sugar & cinnamon mixture
1 envelope powdered skim milk

Cook and drain noodles. Set aside. With a fork, mix cottage cheese and cream cheese. Add sour cream and mix until very smooth. Stir in powdered milk. Add vanilla. Mix. Add sugar and mix well. Add egg whites one at a time. Mix until very smooth and well combined. (All mixing can be done with a fork). Pour mixture over noodles and mix well. Oil a 13 x 9″ baking pan. Pour in noodle mixture. Sprinkle top with sugar and cinnamon mixture. Bake at 350 degrees for about 1 hour and 25 minutes. Cool. Refrigerate and slice when cold.

Sweet Parve Kugel
I used to have the recipe for a sweet kugel that was just noodles, golden raisins, cinnamon, and sugar. I have no idea where the recipe is now. But, just use the same amount of noodles, and add a healthy amount of the other ingredients. Bake as above recipes.

Variations can include apples and cinnamon.
